Role: Head Chef
Updown is a multi award winning luxury Hotel & Restaurant set in a magical former farmstead with acres of beautiful gardens and woodland.
We’re looking for a super experienced, exceptionally talented, and highly competent Head Chef to join the senior management team and lead the kitchen.
This includes overseeing the whole food operation on site, including breakfast, lunch, dinner in the main restaurant as well as room service and a busy events and group bookings schedule. Ensuring the highest standards are met, the role has a strong focus on management and operations with a real emphasis on the day to day running of the kitchen. You will also work closely with the Chef Director, who writes the menus and leads the direction of the food offering.
A deep understanding and passion for food is essential whilst also having excellent technique, the Chef Director hopes to develop a strong level of trust with the candidate, allowing for the head chef to have creative input into the food. The candidate should understand this will take time.
Key Requirements:
- Ability to constantly perform well in a high-pressure and fast-paced environment and keep a cool head
- Excellent organisational skills to ensure the smooth running of a kitchen
- In-depth knowledge of all the sections in the kitchen to efficiently manage operations
- Excellent leadership skills to effectively manage and motivate the kitchen team
- Excellent financial acumen with a focus on managing purchasing and a consistent GP
- Exceptional culinary talent
- Computer literacy, including a working knowledge of Microsoft word/excel
- Business acumen to make sound decisions regarding things like menu prices and kitchen processes
Key Responsibilities:
- Foster a positive, supportive and serious work environment with emphasis on teaching
- Ensure the kitchen steam adhere to the highest quality, hygiene and cleanliness standards
- Ensuring BOH department is always compliant with all its obligations including Haccp/Health & Safety
- Managing suppliers and ensuring that they always deliver best quality goods
- Managing the inventory and ordering stock as needed
- Overseeing the maintenance of kitchen equipment and organising repairs when needed
- Handling staff issues, such as sick leave and attendance, and taking disciplinary action when necessary
Salary is extremely competitive and based on experience
Role: Restaurant Manager
We are seeking a dynamic and experienced Restaurant Manager to lead our team and oversee the daily operations of our restaurant. The ideal candidate will be passionate about delivering exceptional customer service, managing a high-performing team, and driving sales growth. You will be responsible for ensuring the smooth running of the restaurant, maintaining high standards of food quality and service, and creating a positive work environment for all staff
This includes running the restaurant, and FOH team. Ensuring the highest standards are met, the role has a strong focus on management and operations with a real emphasis on the day to day running of the restaurant.
Key Requirements:
- A great knowledge of food and beverage to ensure you can coach your team effectively
- Excellent leadership skills to effectively manage and motivate the restaurant team
- Excellent verbal and written communication skills, with the ability to interact effectively with staff, customers, and suppliers.
- Strong commitment to providing outstanding customer service and the ability to resolve issues effectively.
- Strong problem-solving skills and the ability to think on your feet in a dynamic environment.
- Willingness to work evenings, weekends, and holidays as needed.
- Proficiency in restaurant management software and POS systems
Key Responsibilities:
- Oversee the day-to-day operations of the restaurant, including opening and closing procedures, inventory management, and staff scheduling.
- Preparing the restaurant for service including menu printing, POS programming and staff briefing
- Recruit, train, supervise, and motivate restaurant staff, ensuring a high level of morale and performance.
- Foster a positive, supportive and serious work environment with emphasis on teaching
- Maintaining the highest levels of cleanliness at all times
- Curating a training program for the front of house team
- Following organisation policies and procedures
- Maintain a focus on customer satisfaction, ensuring that guests have a positive dining experience. Handle customer inquiries, complaints, and feedback with professionalism and care.

- Managing the inventory and ordering stock as needed
